Papaya
salad (Som tum)

Ingredients

Medium dark green papaya |

Garlic cloves |

Green Thai chilies |

Tomatoes, cut into wedges |

tsp Salt |

cup Lime juice or tamarind
juice |
Preparation Peel
the papaya and rinse under running water. Remove
the seeds and shred the flesh with a grater. Set
aside. Place the garlic cloves and chilies in
a wooden mortar and pound with a pestle until
crushed into chunks. Add the papaya and the remaining
ingredients and gently combine all with the pestle
and a spoon. Serve cold. |
Khao Pad (Fried rice) |

Ingredients (2 servings)

tbsp Vegetable oil |

gr. Boneless skinned chicken breast, cut
into thin strips |

Medium-sized onion, sliced |

Eggs |
4 |
cups Cooked rice |
2 |
tsp White Soya sauce |
1 |
tsp Fish sauce |
1 |
tsp Sugar |
1 |
tsp Ground white pepper, Spring onion,
Coriander leaves, cucumber for garnish |
Preparation Heat
the oil in a wok, add the chicken and garlic and
mix well over the heat for 1 minute. Add onion
and cook for 1 minute break in the eggs and mix
well, and then stir in the rice and the rest of
the ingredients. Stir well. Cook for two more
minutes and serve immediately with cucumber slices
and whole spring onion. |
